Here in Maine, whoopee pies are pretty much a staple. This recipe is a play on traditional whoopee pies, with cream cheese frosting and delicious dark chocolate whoopies.
Ingredients You’ll Need:
Whoopies: 2 tbsp butter softened
1/2 cup granulated sugar
1 1/2 cups Original Bisquick baking mix2 tbsp dark cocoa powder
1 egg
1 tsp vanila
1/3 cup milk
Frosting: 4 oz cream cheese softened
1/4 cup butter
1/2 tsp vanilla
1 1/4 cups powdered/confectioners sugar
To Get Started:
1. Preheat oven to 350 degrees Fahrenheit,
2. Line 2 large cookie sheets with parchment paper
3. In mixing bowl, using electric mixer, beat 2 tbsp of butter and the granulated sugar until light and fluffy
4. Add bisquick, egg and milk together and beat
5. Add the rest of the ingredients (cocoa and vanilla)
6. Beat finished batter until thick and creamy
7. Cookie batter will be thick and sticky, this is okay!
8. Drop by tablespoonfuls or cookie/melon/ice cream scooper-fulls of dough onto cookie sheets
9. Leave about 2 inches in between each scoop
10. Bake for 8-10 minutes or until tops spring back when lightly touched
11. Cool Completely
12. I ended up with 34 whoopies (17 pies)
13. For the frosting; combine the 4 oz cream cheese with the 1/4 cup of butter and beat together with electric mixer
14. Add the remaining frosting ingredients (vanilla and powdered sugar)
15. Beat together until creamy
16. Once whoopies are cool spread a generous sized dollop of frosting onto bottom-side of one whoopie
17. Place another bottom-side down whoopie on top of frosted side
18. Serve, enjoy and store extra in refrigerator.
